How common and how tough animals are
One multiplier for prevalence and one for health, per animal species.
What does this setting do?
Each of the nine species has two multipliers. Prevalence sets how many animals of that kind exist in the world; 0 removes the species entirely, 2.0 doubles the population. Health determines how many hits an animal takes.
These values decide more than hunting. On many servers meat is the most reliable food source, independent of loot and traders. Lowering the prevalence of deer, boar and chicken quietly makes survival as a whole harder — and hits new players hardest, because they lack the gear for other routes.
For bear and wolf, health works differently than for livestock: it decides how dangerous a forest encounter is. A tough bear is practically unbeatable with a starter weapon.

Livestock at 1.0 to 1.5, predators at 0.7 — forests stay walkable.
Defaults.
Livestock at 0.5, bear and wolf tougher. Hunting becomes an expedition.
What to watch out for
Its by-products go with it: no feathers, no bones, no hides of that kind. Check first whether recipes or crafting depend on them.
The mutated variants of bear, boar, deer and wolf are separate creatures and are not covered by these multipliers.
